Monica H. San Miguel, Founder & CEO
Monica H. San Miguel is a food and health industry visionary, digital innovator, and author. She is a nutrition, wellness, and expert, driven to spread the word about healthy eating. Having spent more than 18 years in a variety of leadership roles in the food, health and wellness industries, including Digital Marketing & Strategy, Content, Social Media & E-commerce, Analytics, Customer & Integrated Marketing, Brand Management, Global Innovation & Better-For-You New Product Development. She is uniquely qualified for the job! A life-long athlete, played tennis at both the collegiate and professional levels, earning a full athletic scholarship to Texas A&M University to earn her nutritional science degree. She then earned her MBA in Marketing and completed Ph.D. coursework in Healthcare Marketing. She is the proud mother of two children, and an entrepreneur with a mission to create a HueMovement to encourage kids and families to lead a healthy, colorful lifestyle.

Kathleen E. Bethin, MD, PhD

Both a practicing physician and a university professor, Kathleen has worked at the forefront of pediatric medicine for more than 30 years. She has spent nearly ten of those years leading clinical trials into childhood obesity, pediatric diabetes, adrenal disorder, and thyroid disease, helping change the way the medical community thinks about children’s nutrition.
Kathleen’s work in children’s medicine has received awards and accolades from major universities for more than thirty years. She has dedicated her life to improving the health of children, conducting clinical trials into pediatric diabetes, adrenal disorder, thyroid disease, and childhood obesity.
In addition, as Program Director in the Department of Pediatrics, Kathleen supervises and monitors the training of the next generation of pediatric professionals.
Karla Chavez M.D Pediatric Gastroenterologist and Nutrition

Karla has worked as pediatric gastroenterology focus in nutrition for the last 10 years. She has experience in diagnosis and management of food allergy, gastroesophageal reflux, infant colic, constipation, failure to thrive, picky eaters, chronic diarrhea, nutrition for special needs.
As researcher at the National Research System CONACYT, she has spent nearly seven years leading clinical research projects in the pediatric field, specializing in parents of the nutritional status of their children perception as a risk factor for overweight and obesity. Currently she is Research Coordinator of the Department of Pediatrics, that aims to develop evidence-based and high-quality clinical research projects. In addition, as university professor in the Department of Pediatrics, Karla supervises and monitors the training of the next generation of pediatric professionals.
Julieta Rodríguez, Pediatra, inmunóloga, Doctora en ciencias clínicas

Julieta ha trabajado como pediatra e inmunóloga enfocada en la asesoría del manejo optimo del recién nacido sano, lactancia materna, ablactación y neuronutrición infantil en los últimos 7 años además se ha actualizado en tópicos como neutronutrición infantil y los elementos que acompañan a un desarrollo cerebral infantil óptimo. Como investigadora del Sistema Nacional de investigadores CONACYT, se ha dedicado a la investigación clínica de enfermedades nutricionales, endocrinológicas, especializándose en la investigación de los factores psicológicos que afectan a los padres de niños con obesidad, así como los factores psicológicos que hacen que una madre deje de dar lactancia materna, además tiene especial interés en el área de neuronutrición infantil para impulsar un desarrollo cerebral optimo del niño.

He is the recipient of numerous culinary and educational honors; America Diabetic Association’s “Father of the Year Award” in 2012. JWU Publishing Award 2011, JWU Community Service Award 2009, JWU “Teacher of the Year Award 2008”, and JWU “Outstanding Service Award 2006”.
Lisa Underwood, MS, MBA, RDN

Lisa is a Registered Dietitian Nutritionist (RDN) with expertise in personal nutrition coaching for women and men seeking a healthy lifestyle. Areas of service include adult weight management, diabetes self-care, menopause weight gain, and gut health. She is also the Director of Marketing at RDN Nutrition Consulting.

Gigi Kwok-Hinsley, DrPH, MS, RD

Gigi Kwok-Hinsley, DrPH, M.S., R.D., is a Registered Dietitian with a Doctorate in Public Health in the Greater Los Angeles area specializing in nutrition and public health research with experience in adult weight management, school nutrition and health and wellness. Dr. Kwok-Hinsley completed her doctorate in public health at Loma Linda University School of Public Health with an emphasis in preventive care and healthcare management. She has significant experience in weight management, plant-based diets, nutrition research, and health education for a diverse population.
Currently, Gigi is a clinical nutrition research scientist that aims to deliver evidence-based, high-quality products for everyday consumers for everyday use. She is also an adjunct professor at Mt San Antonio Community College in the Greater Los Angeles area. In the past, Dr. Kwok-Hinsley developed and launched NutriBullet University, a corporate social responsibility program for NutriBullet, aimed to increase fruit and vegetable intake at school, at home, and in the community. She was also a clinical research dietitian understanding weight loss and protein consumption at Veteran Affairs Hospital and a lifestyle educator at Kaiser Permanente.
Kyle James Lamprecht MS, RD, CSR, CSP, CD-N

Kyle is a Registered Dietitian (RD) working for University of Vermont Medical Center as the Metabolic & Outpatient Pediatric Specialty Dietitian. He sees individuals with inborn errors of metabolism in Clinical Genetics as well as pediatric patients in the several specialty areas including Pediatric Nephrology, Pediatric Cardiology, Pediatric Gastroenterology and Feeding Team. Kyle spends a large portion of his time caring for patients with feeding difficulties and is passionate about educating children, adolescents and their families/caregivers on healthy eating habits and lifestyle changes. Additionally, Kyle works at University of New Haven as an Adjunct Professor in Human Nutrition.
His biggest nutritional challenge is providing the best nutritional care for these complex populations when resources are limited, which motivates him to be creative and collaborative with other disciplines. He received his Bachelor of Science degree in Dietetics from SUNY Oneonta and Master of Science degree in Human Nutrition with a concentration in Nutritional Genomics from University of New Haven. Kyle is a Board Certified Specialist in both Pediatric Nutrition and Renal Nutrition which led to serving as a Subject Matter Expert for the Board Certification as a Specialist in Pediatric Nutrition. Kyle is also pursuing his Doctorate of Clinical Nutrition (DCN) at Rutgers University. He currently serves as the Chair for Renal Dietitians (RPG), which has been an enlightening and rewarding opportunity. He holds memberships with the Academy of Nutrition and Dietetics (AND), Pediatric Nutrition Practice Group (PNG), Renal Nutrition Dietetic Practice Group (RPG), Nutrition Entrepreneurs Dietetic Practice Group (NE) and Genetic Metabolic Dietitians International (GMDI). Kyle recently authored a book chapter discussing nephrolithiasis nutrition therapy in the pediatric population and speaks on many pediatric nutrition-focused topics including complementary feeding, nutrition and brain development and nutrition therapy in pediatric renal disease.
In addition to his love for nutrition, Kyle also has a passion for dance fitness and devotes his free time to teaching Zumba® Fitness classes as well as licensing individuals to teach Zumba® Fitness classes as a Zumba® Education Specialist.
Karla Alejandra | Nutritionist
Karla has a master’s degree in Clinical Nutrition, likes taking time with each and everyone of her patients and is passionate about helping them achieve a better health and quality of life through managing their nutrition. She mostly works with patients suffering from chronic disease such as diabetes, hypertension, and chronic kidney disease, gastric and bowel diseases, and autoimmune disease.
She also has a passion for learning, and teaching and traveling. She has been a teacher at the high school level and is now a professor at ITESM university where she works with dietitians in training. She also likes research and has participated in nutrition, neuroimmunology and assisted reproduction programs.
Linn Steward MA, RDN, CDN
Linn is a registered dietitian with experience in both clinical nutrition and wellness. She currently owns Gourmet Metrics LLC and runs nutrition stats for website recipe collections and cookbook editors. She has cooked privately in Paris, worked on a farm in British Columbia, and holds a Masters Degree from Berkeley. She blogs and tweets about food, regulatory issues, food labels, and home cooking.es.
